At the age of 14, Brad knew just what he wanted out of life…more meat! He left school to do a chef’s apprenticeship at the renowned Brass Tavern in Melbourne. From there, he went on to complete his butcher’s apprenticeship in a traditional butcher shop.


Brad moved to Queensland 26 years ago with the family to start their own family business, Pattons Farm Fresh Meats. When his father passed away in 2000, he took over, growing their small company by purchasing Big Gun Butchers, resulting in making it Queensland’s largest independent retail butcher. It grew to 8 stores with 160 dedicated staff members, turning over 32 million dollars per year.


In 2016, saw the launch of The Butcher Shoppe Cannon Hill, serving the premium cuts of meat it’s known for today. This incredibly successful meat shop is the very future of butchering, and eager to show you the difference butchering makes.
